Eryngium are beautiful architectural plants. Distinct sculptured foliage adds texture to your borders whilst displaying curious attractive flowers in the summer. Extra thick outer leaf layers reduce water loss helping the flowers, whilst others may frazzle. Multitudes of large, egg-shaded flowerheads, comprising clusters of many intense, almost iridescent, flowers are surrounded by spiny, ruff-like petals. Held high on strong, bright blue stems above prickly foliage, the blooms make wonderful cut or dried flowers for arrangements within your home. Much loved by our pollinating friends, who visit to partake of the rich nectar.The Georgians collected the roots and cooked them in the same way as we might asparagus. However, it was the roots reputed aphrodisiac properties which really interested our ancestors.. Eryngium are drought tolerant and prefer to be grown in well-drained soil in sun. Being fully hardy perennials, you will receive years of joy, with no winter protection required.
