Sow seeds thinly in a propagator and cover with 3mm (1?4″) compost and place in a shaded area. Germination 8-24 days. Plant out in a sunny spot 15cm (6″) apart in well-drained soil. Roots can be forced like Witloof to produce paler, tender shoots.
Chicory can be eaten raw or cooked and is a delicious alternative to add to roasts, stir-fries or as a vegetable side dish. Eat soon after picking for best flavour.
